  • 1.5 cups Flour (190g)
  • 4 tsp Baking Powder Ensure it's fresh for best results.
  • 0.5 tsp Salt
  • 3 Tbsp Sugar (optional) Add for a hint of sweetness.

Wet Ingredients

  • 1 Egg Make sure to crack it well.
  • 1.25 cups Milk (300ml)
  • 0.25 cups Butter (60g, melted) Melt in microwave or saucepan.
  • 0.5 tsp Vanilla Extract

Preparation

  • In a large bowl, combine flour, baking powder, salt, and sugar.
  • In a smaller bowl, whisk together the egg, milk, and vanilla extract.
  • Melt the butter and add it into the wet ingredients, mixing until well combined.
  • Make a well in the dry ingredients and pour in the wet mixture, folding until just combined. Do not overmix; lumps are okay.

Cooking

  • Heat a heavy skillet over medium-low heat and add a knob of butter.
  • Pour approximately 1/3 cup of batter into the skillet for each pancake.
  • Cook for 2-3 minutes, or until edges are set and bubbles form on the surface.
  • Flip the pancake and cook for another 2-3 minutes until browned.
  • Repeat the process with the remaining batter.

Notes

Serving suggestions include warm with butter, maple syrup, fresh fruits, or whipped cream. For storage, cool pancakes completely, then stack in an airtight container; refrigerate for up to 4 days or freeze for up to 2 months.
