Dry Ingredients

  • 1.5 cups all-purpose flour
  • 3.5 teaspoons baking powder Ensure baking powder is fresh.
  • 1 tablespoon sugar
  • 0.5 teaspoon salt

Wet Ingredients

  • 1.25 cups milk or buttermilk For added flavor, use buttermilk.
  • 1 large egg
  • 3 tablespoons melted butter Plus more for cooking.
  • 1 teaspoon vanilla extract Optional ingredient.

Preparation

  • In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  • In a separate medium bowl, crack the egg and add the milk and melted butter. Whisk until smooth, adding vanilla extract if desired.
  • Make a well in the center of the dry ingredients and pour in the wet mixture. Stir just until the flour is moistened; a few lumps are fine.

Cooking

  • Heat a nonstick skillet or griddle over medium heat and add a small amount of butter to the surface.
  • Pour about 1/4 cup of batter for each pancake onto the hot griddle, spaced apart.
  • Cook undisturbed for about 2 minutes or until bubbles form on the surface and edges appear set.
  • Flip the pancake with a spatula and cook for another 1 to 2 minutes until golden brown.
  • Transfer cooked pancakes to a plate and serve immediately with desired toppings.

Notes

For best results, let the batter rest for 5 minutes before cooking. Store leftovers in an airtight container for up to three days.
