  • 1/4 cup bell pepper, diced
  • 1/4 cup spinach, chopped
  • 1/4 cup onion, diced
  • 1/4 cup low-fat cheese (optional) Can be omitted for a lighter option.

Preparation

  • In a mixing bowl, whisk together the egg whites until frothy and slightly increased in volume.
  • Season the egg whites with salt and pepper to taste.

Cooking

  • Heat the non-stick skillet over medium heat and lightly coat it with cooking spray or olive oil.
  • Pour the whisked egg whites into the skillet, tilting the pan to ensure even coverage. Allow it to cook without stirring for about 2-3 minutes.
  • Once the edges of the omelette begin to set, add the diced bell pepper, chopped spinach, onion, and cheese (if using) on one half of the omelette.
  • Continue cooking for another 2-3 minutes until the bottom is golden and the top is slightly set.
  • Carefully fold the omelette in half over the filling using a spatula. Cook for an additional minute to ensure the inside is cooked through.
  • Slide the omelette onto a plate, cut it in half, and serve warm.

Notes

For a more impressive presentation, serve with a side of mixed greens or whole-grain toast.
