  • 1 large egg Adds richness and acts as a binder.
  • 20 g self-raising flour About 2½ tablespoons; avoid overmixing.

Preparation

  • Place the banana in a medium bowl and mash it well until mostly smooth.
  • Add the egg and whisk until the mixture is fully blended.
  • Gently fold in the self-raising flour just until combined, avoiding overmixing.

Cooking

  • Set a nonstick frying pan over medium heat and lightly grease it with cooking spray, coconut oil, or a small amount of butter.
  • Spoon about one quarter of the batter into the center of the pan.
  • Cook for around 2 minutes, until bubbles begin to show on the surface.
  • Turn the pancake carefully with a spatula and cook the other side for about 2 minutes more until golden.
  • Transfer to a plate and keep warm, then repeat with the remaining batter to make 4 pancakes.

Notes

Serve with favorite toppings such as maple syrup, whipped cream, fresh banana slices, or mixed berries. Leftovers can be stored in an airtight container in the refrigerator for up to three days or frozen for up to two months.
