  • 1 tablespoon olive oil To coat the skillet.
  • 1 pound ground beef or pork sausage Choose based on preference.
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup long grain white rice
  • 2 ½ cups beef broth
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 can cream of chicken soup (10.5 oz)
  • ½ teaspoon hot sauce (optional) For additional spice.
  • 1 tablespoon chopped parsley or green onions for garnish (optional)

Cooking

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Brown the ground beef or sausage, breaking it apart. Drain excess fat if needed.
  • Add onion, bell pepper, and celery. Cook until softened. Then add garlic, paprika, Italian seasoning, salt, and pepper. Cook briefly.
  • Stir in rice, beef broth, cream of mushroom soup, and cream of chicken soup. Bring to a low boil, then simmer covered for 20–25 minutes.
  • Stir in hot sauce if desired. Let rest, then garnish with parsley or green onions before serving.

Notes

Store in an airtight container in the refrigerator for up to three to four days. Reheat with a splash of beef broth or water to maintain creaminess.
