  • Toast the long-grain rice for a few minutes in the pot, mixing well.
  • Pour in chicken broth, diced tomatoes, tomato sauce, kidney beans, and pinto beans, then stir.
  • Season with chili powder, smoked paprika, oregano, salt, and pepper; adjust as needed.
  • Bring the mixture to a boil, then reduce heat to a simmer and cover.
  • Cook until the rice is tender and has absorbed the liquid, about 20 to 25 minutes.
  • Fluff with a fork and garnish with chopped green onions before serving.
