Flammkuchen, or Tarte Flambée, is a delicious dish from Alsace featuring a thin, crisp base topped with creamy cheese, crispy bacon, and sweet onions, perfect for sharing at gatherings.

Ingredients
  

Dough

  • 2 cups 2 cups (250 g) flour
  • to taste pinch Salt
  • 3 tbsp 3 tbsp olive oil
  • 2/3 cup 2/3 cup (150 mL) water
  • Flour, for dusting/rolling

Toppings

  • 3/4 cup 3/4 cup (100 g) fromage blanc or ricotta
  • 1/4 cup 1/4 cup (50 g) crème fraîche
  • to taste Black pepper
  • 2 2 onions, sliced
  • 4 1/2 oz 4 1/2 oz (130 g) bacon lardons

Instructions
 

Preparation

  • In a bowl, combine the flour and salt, then add olive oil and water. Mix to form a dough.
  • Knead for 5 minutes until smooth. Lightly flour your surface and roll the dough out thin; place it on a baking sheet.

Topping

  • Mix the fromage blanc (or ricotta) with the crème fraîche. Season with pepper (and a little salt if needed), then spread over the dough.
  • Top with sliced onions and bacon lardons.

Baking

  • Bake at 400°F (200°C) for 20 minutes, until golden and crisp.

Notes

Flammkuchen is traditionally cut into squares or wedges for serving. It pairs well with a crisp salad and a glass of white wine or light lager. Consider personalizing with fresh herbs or a drizzle of balsamic glaze.
