Ingredients
  

Main Ingredients

  • 2 cups cooked rice Preferably from the previous day.
  • 2 large eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil For cooking.

Vegetables

  • 1 cup mixed vegetables (carrots, peas, corn) Any combination you like.
  • 1 piece green onion, chopped For garnish.

Seasoning

  • to taste salt
  • to taste pepper

Instructions
 

Preparation

  • Heat the vegetable oil in a large skillet over medium heat.
  • Add the mixed vegetables and sauté for 2-3 minutes until tender.
  • Push the vegetables to the side of the skillet and add the eggs, scrambling them until fully cooked.

Cooking

  • Add the cooked rice to the skillet along with the soy sauce, salt, and pepper.
  • Mix everything together and cook for another 2-3 minutes until heated through.
  • Stir in the chopped green onion and serve hot.

Notes

Use day-old rice for best results. Customize with your favorite proteins or vegetables. Store leftovers in an airtight container in the refrigerator for up to three days.
