  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled

Dressing Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Preparation

  • Cook the orzo pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine the cooled orzo pasta, cherry tomatoes, cucumber, bell peppers, red onion, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the pasta salad and toss to combine.
  • Gently fold in the feta cheese.
