  • 2 cups vegetable broth or water Use to cook the rice.
  • 1 tablespoon olive oil For sautéing onions and garlic.
  • 1 small onion, diced Provides base flavor.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1 teaspoon chili powder Adds warmth and flavor.
  • 1 teaspoon cumin Essential spice for Mexican cuisine.
  • 1/2 teaspoon salt
  • 1/2 cup diced tomatoes (canned or fresh) Contributes moisture and flavor.
  • 1/4 cup chopped cilantro (optional) Adds freshness.

Instructions
 

Preparation

  • Heat olive oil in a large pan over medium heat.
  • Add the diced onion and sauté until soft, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the rice, chili powder, cumin, and salt; stir to coat the rice with the oil and spices.
  • Pour in the vegetable broth (or water) and add the diced tomatoes.
  • Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.
  • Remove from heat and let it sit covered for 5 minutes.
  • Fluff the rice with a fork and stir in chopped cilantro if desired.

Notes

Store leftovers in an airtight container in the fridge for up to four days. Can freeze for up to three months. Consider using homemade vegetable broth for added flavor.
