Ingredients
  

For the Meatballs

  • 1 lb ground beef or turkey Use your preferred ground meat.
  • 1/2 cup breadcrumbs For binding the meatballs.
  • 1/4 cup grated Parmesan cheese Adds flavor to the meatballs.
  • 1 ea egg Acts as a binder.
  • 2 cloves garlic, minced For seasoning.
  • 1 tsp dried Italian herbs For flavor.
  • to taste Salt and pepper Adjust according to preference.

For the Stew

  • 1 medium onion, chopped Adds base flavor.
  • 2 ea carrots, diced Adds sweetness and color.
  • 2 ea celery stalks, diced Adds crunch and flavor.
  • 4 cups beef or vegetable broth Base of the stew.
  • 1 can (14 oz) diced tomatoes Adds acidity and flavor.
  • 1 cup green beans, trimmed and cut For freshness and color.
  • 2 tbsp olive oil For sautéing.
  • to taste Fresh parsley for garnish For presentation.

Instructions
 

Preparation

  • In a bowl, combine ground meat, breadcrumbs, Parmesan, egg, garlic, Italian herbs, salt, and pepper. Form into meatballs.

Cooking

  • In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery, and sauté until softened, about 5 minutes.
  • Add meatballs to the pot and brown on all sides.
  • Pour in the broth and diced tomatoes, bring to a simmer.
  • Add green beans and cook until meatballs are cooked through, about 20 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

For an extra touch, serve with crusty bread or a side salad. You can add Worcestershire sauce or red pepper flakes for a kick.
