Preparation

  • In a small bowl, combine avocado oil, honey, tamari, minced garlic, apple cider vinegar, smoked paprika, and garlic powder, and whisk together to create the marinade.
  • Transfer the chicken thighs into a bowl or ziplock bag and pour the marinade over, ensuring each piece is coated. Seal and let marinate for 20-30 minutes as the chicken comes to room temperature.
  • Preheat the oven to 400°F (200°C).
  • After marinating, arrange the chicken thighs on a parchment-lined baking sheet.

Cooking

  • Roast the chicken in the preheated oven for approximately 25 minutes or until they are golden brown and cooked through.
  • While the chicken is roasting, pour the reserved marinade into a saucepan and bring to a gentle boil. Reduce to a simmer and let it thicken for 5-7 minutes.

Serving

  • Serve the chicken thighs over prepared rice and drizzle with the thickened marinade sauce. Optionally garnish with freshly chopped herbs like cilantro or green onion.

Notes

For best results, consider marinating the chicken overnight. Adjust seasonings to taste, and check internal temperature for doneness, which should be 165°F (75°C).
