Main Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes Select good-quality beef chuck for best flavor.
  • 2 tablespoons olive oil For browning the beef.
  • 1 onion chopped Sauté until translucent.
  • 3 cloves garlic, minced Add briefly to prevent burning.
  • 4 carrots sliced Adds sweetness and texture.
  • 4 potatoes diced For hearty texture.
  • 4 cups beef broth Use gluten-free broth if necessary.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste Adjust towards the end of cooking.
  • 2 tablespoons Worcestershire sauce

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the beef cubes and brown on all sides.
  • Remove the beef and set aside.
  • In the same pot, add the chopped onion and cook until translucent.
  • Stir in the minced garlic and cook for another minute.
  • Return the beef to the pot and add the carrots, potatoes, beef broth, thyme, rosemary, salt, pepper, Worcestershire sauce, and bay leaf.

Cooking

  • Bring to a boil, then reduce the heat to low.
  • Cover and simmer for 2-3 hours until the beef is tender.
  • Remove the bay leaf before serving. Enjoy your stew!

Notes

This stew can be made ahead of time and stored in the fridge for up to 3-4 days or frozen for up to three months.
