  • 12 large eggs
  • 1 cup cottage cheese (full fat or low fat)
  • 1/2 cup milk (any kind)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, crumbled bacon or diced ham
  • 1/4 cup finely chopped spinach (optional) optional for added nutrition and flavor

Preparation

  • Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin or silicone muffin molds.
  • In a large bowl, whisk together the eggs, cottage cheese, milk, salt, and pepper until completely smooth.
  • Gently stir in the shredded cheese, cooked bacon or ham, and spinach, if using. Do not overmix.
  • Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.

Cooking

  • Bake for 18 to 22 minutes, or until the egg bites are set in the center and lightly golden.
  • Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.

Notes

These egg bites can be served warm or cooled for meal prep. Store in an airtight container in the fridge for up to four days or freeze for longer storage.
