  • 2 cups cooked rice Use day-old rice for best texture.
  • 2 tablespoons vegetable oil For cooking.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn) Frozen mixed vegetables work well.
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil For flavor.
  • to taste salt and pepper
  • to taste green onions for garnish Finely chopped.

Cooking

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chopped onion and garlic, and sauté until fragrant.
  • Stir in the mixed vegetables and cook until tender.
  • Push the vegetables to one side of the skillet and pour the beaten eggs into the other side, scrambling until cooked.
  • Add the cooked rice to the skillet, mixing everything together.
  • Pour in the soy sauce and sesame oil, and stir until everything is well combined.
  • Season with salt and pepper to taste.
  • Garnish with green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet or microwave, adding a splash of water or soy sauce if needed. Avoid freezing to maintain texture.
