  • 2 lbs boneless, skinless chicken breasts
  • 1 piece bell pepper, sliced
  • 1 piece onion, sliced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes with green chilies
  • Salt and pepper to taste
  • Tortillas for serving

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the slow cooker.
  • Add sliced bell pepper, onion, and the fajita seasoning on top.
  • Pour the diced tomatoes with green chilies over the mixture.
  • Season with salt and pepper.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken in the slow cooker and stir to combine with the vegetables.

Serving

  • Serve in tortillas and add desired toppings.

Notes

Optional: Marinate the chicken in fajita seasoning for deeper flavor. Adjust spice levels to taste and serve with lime juice for added brightness.
