Easter Healthy Carrot Oat Biscuits

Ingredients
  

For the Biscuit Dough

  • 100 g organic porridge oats (to make oat flour)
  • 75 g organic porridge oats
  • 75 g organic carrots finely grated
  • 40 g cheddar cheese (optional) finely grated
  • 1 piece free-range egg, beaten
  • 3 tbsp rapeseed oil (or vegetable oil)
  • 0.5 piece Juice of ½ lemon
  • 2 tsp mixed dried herbs
  • 0.5 tsp garlic powder
  • 1.5 tsp ground cumin

For Decoration

  • Peas, carrot shavings, or chives for decoration

Instructions
 

Preparation

  • Finely grate the carrot and cheese using the fine side of a grater.
  • Blend 100 g of porridge oats into a fine oat flour, then set aside.
  • In a large bowl, combine 75 g porridge oats with garlic powder, cumin, dried herbs, oil, and lemon juice.
  • Add the grated carrot, grated cheese, beaten egg, and oat flour, then mix well.
  • Lightly knead the mixture into a smooth dough ball and chill for 20 minutes.

Baking

  • Preheat the oven to 180°C, or 160°C fan, and line a baking tray with baking paper.
  • Place the dough between two sheets of baking paper and roll it out to about 0.5 cm thick.
  • Cut into biscuit shapes and arrange them on the prepared tray.
  • Bake for 18–20 minutes, until firm and lightly golden.

Notes

These biscuits can be enjoyed warm or at room temperature. They hold well in storage for several days and can even be frozen for up to three months.
