Ingredients
  

For the Carrot Cake

  • 1/2 cup melted unsalted butter Make sure to let it cool slightly before mixing.
  • 1 cup packed light brown sugar Provides a rich, caramel-like sweetness.
  • 1 large egg
  • 1 tablespoon vanilla Used in both layers.
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon Can add nutmeg or ginger for extra flavor.
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup grated carrots Freshly grated for moisture and vitamins.

For the Cream Cheese Layer

  • 4 oz cream cheese, softened Ensure it's at room temperature for smooth blending.
  • 1/4 cup sugar
  • 3/4 teaspoon vanilla Adds richness.

Preparation

  • Preheat the oven to 350°F and grease an 8x8-inch baking pan with nonstick spray; line with parchment paper if desired for easier removal.
  • Melt the butter, then mix it with brown sugar in a medium bowl.
  • Stir in the egg and vanilla until combined.
  • Add the flour, cinnamon, baking powder, and salt, then mix until smooth.
  • Fold in the shredded carrots and set the carrot cake batter aside.
  • In another bowl, beat the cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.

Layering and Baking

  • Spread half of the carrot cake batter into the prepared pan.
  • Spoon half of the cheesecake mixture on top, then add the remaining carrot batter and finish with the rest of the cheesecake mixture.
  • Gently swirl the two batters together with a knife.
  • Bake for 35-40 minutes until the edges are golden and the center is almost set; cool completely, then refrigerate in an airtight container.

Notes

These bars can be made a day ahead and served either chilled or at room temperature. Dust with powdered sugar or decorate with sprinkles for presentation.
