Cookie Base

  • 1 cup butter, softened Make sure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups chow mein noodles
  • 1 cup chocolate chips

Decoration

  • 1 cup mini eggs or jelly beans For topping

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture until just combined.
  • Fold in the chow mein noodles and chocolate chips.

Baking

  • Drop spoonfuls of dough onto a lined baking sheet.
  • Use your thumb to create small indents in the center of each cookie.
  • Bake for 10-12 minutes until the edges are golden brown.
  • Press mini eggs or jelly beans into the center of each cookie while they are still warm. Let cool completely on a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to one week. Freeze for longer storage (up to three months). Consider chilling dough for 30 minutes before baking for enhanced flavors.
