  • 400 ml hot beef stock Ensure stock is hot for even cooking.
  • 45 g butter Adds richness to the stew.
  • Salt, to taste Seasoning to enhance flavors.
  • Freshly ground black pepper, to taste A generous amount enhances taste.

Instructions
 

Preparation

  • Peel and cut the potatoes and apples into large chunks.
  • Place the potato cubes at the bottom of a large saucepan or Dutch oven.
  • Add the tart apples over the potatoes, followed by the sweeter apples.

Cooking

  • Pour the hot beef stock over the top, ensuring the liquid covers the potatoes while the apples peek through.
  • Cover the pan and bring to a gentle simmer over low to medium heat.
  • Simmer for about 20 to 25 minutes, checking occasionally to ensure even cooking.
  • Once tender, add butter and season with salt and black pepper.
  • Lightly mash the mixture to maintain a rustic texture, leaving larger pieces visible.
  • Taste and adjust seasoning, then serve warm.

Notes
