Main Ingredients

  • 1 cup uncooked long grain white rice Make sure to use long grain for best results.
  • 2 medium boneless skinless chicken breasts or thighs Thighs can add more flavor.
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1.75 cups chicken broth
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup shredded cheddar or mozzarella cheese (optional) For added flavor.
  • 2 tablespoons chopped cooked bacon or parsley (optional) For garnish or additional flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F and lightly grease a 9x13-inch baking dish.
  • In the prepared dish, combine the uncooked rice with the cream of chicken soup, cream of mushroom soup, and chicken broth.
  • Add onion powder, garlic powder, salt, and black pepper. Mix everything together until well combined.
  • Lay the chicken breasts or thighs on top of the rice mixture, spooning some of the mixture over them.

Baking

  • Cover the dish with foil and bake in the preheated oven for 45 minutes.
  • After 45 minutes, remove the foil and bake for an additional 15 to 20 minutes until the chicken is cooked through.
  • If desired, add cheese or sprinkle chopped bacon or parsley on top in the last few minutes of baking.
  • Once finished, let the dish rest for about 5 minutes before serving.

Notes

This casserole can be customized with additional vegetables or different proteins. Use long-grain white rice for best results, and adjust cooking times if using brown rice.
