  • 1 cup Grated Cucumber Squeeze out excess moisture.
  • 2 tablespoons Dill Fresh preferred over dried.
  • 2 tablespoons Lemon Juice Brightens the sauce.
  • 1 teaspoon Oregano Can mix up with Italian seasoning.
  • 1 teaspoon Paprika Enhances flavor profile.
  • 1 cup Cucumber Substitute Diced zucchini or bell pepper work.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, spread the long grain white rice evenly. Pour the chicken broth on top, ensuring the rice is well-covered.
  • Add the boneless skinless chicken breasts on top of the rice mixture. Drizzle with olive oil and season generously with salt, pepper, and paprika.

Cooking

  • Cover the dish with aluminum foil and bake for 45 minutes.
  • While the dish is baking, prepare the tzatziki sauce by mixing together Greek yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and salt. Mix well and set aside.
  • After 45 minutes, remove the foil and bake uncovered for an additional 10 to 15 minutes until the chicken is fully cooked and golden brown.
  • Let the dish rest for a few minutes before serving.

Serving

  • Serve the chicken over a bed of rice topped with the cool tzatziki sauce and diced cucumber substitute as desired.

Notes

To elevate the flavors, consider marinating the chicken in olive oil, lemon juice, garlic, and herbs for at least an hour before baking. Experiment with vegetable substitutes for extra color and nutrients.
