Base Ingredients

  • 1 can 1 can (13.4 oz / 395 ml) dulce de leche, such as La Lechera This is the key ingredient that provides sweetness and caramel flavor.
  • 2 teaspoons 2 teaspoons pure vanilla extract Use pure vanilla for the best flavor.
  • 1/2 cup 1/2 cup half-and-half This adds creaminess to the ice cream base.
  • 1 1/2 cups 1 1/2 cups heavy whipping cream Make sure to whip the cream until stiff peaks form.

Preparation

  • In a medium bowl, mix the dulce de leche, vanilla, and half-and-half until completely smooth.
  • In a separate bowl, beat the heavy cream with a hand mixer or stand mixer until stiff peaks form, about 1 to 1 1/2 minutes.
  • Gently fold the dulce de leche mixture into the whipped cream until fully combined and smooth, with no lumps remaining.
  • Transfer the mixture to an 8 x 8-inch pan or a similarly sized freezer-safe container. Spread the surface evenly with a spatula.
  • Freeze uncovered for 3 to 5 hours, or until firm. For a firmer texture, leave it overnight.

Notes

Store leftovers covered tightly in plastic wrap or foil in the freezer for up to 3 weeks. For extra richness, swirl in some homemade caramel before freezing.
