Ingredients
  

For the dressing

  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Pickle Brine
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Sugar
  • to taste Salt and Pepper Adjust according to taste.

Main ingredients

  • 8 slices Bacon Cooked until crispy.
  • 8 ounces Short Pasta Cooked al dente.
  • 1 cup Pickles Diced.
  • 1 cup Mini Cucumbers Diced.
  • 1 cup Mild Cheese Diced.
  • 1/2 cup Red Onions Diced.
  • 1/4 cup Fresh Dill Chopped finely.

Instructions
 

Preparation

  • Cook the short pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process, then set aside.
  • In a large skillet, cook the bacon over medium heat until crispy. Transfer to a paper towel-lined plate to cool, then crumble into smaller pieces when cooled.

Mixing

  • In a large mixing bowl, combine mayonnaise, sour cream, pickle brine, yellow mustard, kosher salt, sugar, and black pepper to create the dressing.
  • Add the cooked pasta, chopped pickles, mini cucumbers, diced mild cheese, diced red onions, chopped fresh dill, and crumbled bacon to the dressing. Mix until everything is well combined and evenly coated.
  • Adjust seasoning with additional salt and pepper as needed. Cover and refrigerate for at least an hour before serving to allow flavors to meld.

Notes

For an enhanced flavor, consider adding chopped bell peppers or jalapeños. Store leftovers in an airtight container for 3-4 days.
