Ingredients
  

For the Cream Mixture

  • 1/2 stick butter (softened)
  • 1/2 brick cream cheese (softened)
  • 1 tsp vanilla extract
  • 4 cups confectioner's sugar Gradually add to achieve desired consistency.
  • 2 1/2 cups sweetened coconut
  • 2 tbsp cinnamon
  • 2-3 tbsp Irish Cream Liqueur (or 1 tsp Irish Cream extract for non-alcoholic option)

For Coating

  • 1/2 cup finely crushed shortbread cookie crumbs

Preparation of Cream Mixture

  • Cream the softened butter and cream cheese in a mixing bowl until light and fluffy.
  • Gradually add the confectioner's sugar until well combined.
  • Mix in the vanilla extract and Irish Cream (or extract), ensuring the mixture is well blended.
  • Fold in the sweetened coconut and cinnamon until fully incorporated.
  • Chill the mixture in the refrigerator for at least one hour to firm up.

Shaping and Coating

  • Shape the chilled mixture into small oval 'potatoes.'
  • Combine crushed shortbread cookie crumbs with additional cinnamon in a separate bowl.
  • Roll each shaped potato in the crumb mixture until fully coated.
  • Place the coated potatoes on a parchment-lined tray and refrigerate for another hour to set.

Notes

These treats can be prepped ahead of time and are perfect for sharing. Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.
