  • 1 pound shrimp, peeled and deveined
  • 2 large cucumbers, diced Choose firm, crisp cucumbers for the best texture.
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh herbs (such as parsley or cilantro), chopped

Dressing

  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice Adjust to taste for more zing.
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine the diced cucumbers, green onions, and fresh herbs.
  • In a separate bowl, mix the mayonnaise and lime juice to create the dressing.
  • Add the shrimp to the vegetable mixture and pour the dressing over.
  • Toss everything together until well combined.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for about 30 minutes before serving.

Notes

Best served cold. Garnish with extra chopped herbs or lime wedges for presentation. Pairs well with crusty bread or tortilla chips.
