Ingredients
For the Cookies
- 2 ripe bananas, mashed Ensure bananas are very ripe for the best flavor.
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened At room temperature for easy creaming.
- 1 large egg
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional) Add for extra crunch if desired.
For the Cream Cheese Glaze
- 1/2 cup cream cheese, softened
- 1 cup powdered sugar
- 1-2 tablespoons milk Adjust for desired glaze consistency.
Instructions
Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the mashed bananas, egg, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If desired, fold in the chopped walnuts or pecans.
Baking
- Drop rounded tablespoons of the cookie dough onto the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are set and lightly golden.
- While the cookies are baking, prepare the cream cheese glaze by mixing the softened cream cheese, powdered sugar, and enough milk to achieve a smooth consistency.
- Once the cookies have cooled, drizzle the cream cheese glaze over the top.
Notes
Cookies can be stored in an airtight container at room temperature for 2-3 days or refrigerated for about one week. Baked cookies can also be frozen for up to three months.
