Ingredients
  

Main Ingredients

  • 3-4 lb chuck roast Choose a chuck roast for its marbling.
  • 1.5 lb baby potatoes Chopped or halved.
  • 4 large carrots, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced

Broth Mixture

  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 leaf bay leaf Remove before serving.

Seasoning

  • 2 tbsp olive oil For searing the roast.
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper Adjust to taste.

Instructions
 

Preparation

  • Season the roast with salt and pepper.
  • In a skillet, heat olive oil and sear the roast on all sides until browned.
  • Chop the potatoes, carrots, onion, and garlic, and place them in the crockpot.

Cooking

  • Set the seared roast on top of the vegetables.
  • Whisk together beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaf. Pour this mixture over the roast and vegetables.
  • Cover and cook on low for 8-10 hours or high for 4-6 hours.

Serving

  • Remove the bay leaf before serving.
  • Shred or slice the roast and serve it with vegetables and sauce.

Notes

Serve with crusty bread or a light salad. Consider adding fresh herbs for garnishing.
