Ingredients
  

For the Chicken

  • 4 pieces chicken breasts, boneless and skinless
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • salt and pepper, to taste

For the Pitas and Assembly

  • 4 pieces pitas
  • 1 cup tzatziki sauce
  • 1 cup lettuce, shredded
  • 1 cup tomatoes, diced
  • 1/2 cup cucumber, diced

Preparation

  • In a bowl, mix the olive oil, garlic, lemon juice, oregano, salt, and pepper.
  • Place the chicken breasts in the crockpot and pour the marinade over them, ensuring they are well coated.
  • Cook on low for 360 minutes, or on high for 240 minutes until the chicken is cooked through and tender.

Tzatziki Sauce

  • Prepare the tzatziki sauce by mixing Greek yogurt, diced cucumber, minced garlic, dill, lemon juice, salt, and pepper in a bowl.

Assembly

  • Once the chicken is done cooking, shred it with two forks and stir to coat in the flavorful juices.
  • Warm the pitas in a microwave or on a skillet until soft.
  • To assemble, place a portion of shredded chicken in each pita, topped with lettuce, diced tomatoes, cucumber, and a generous squirt of tzatziki sauce.

Notes

For enhanced flavor, consider marinating the chicken overnight. You can also adjust the tzatziki thickness based on preference. This recipe allows for vegetable substitutions to suit your taste.
