  • 2 to 3 pounds beef chuck roast Use a good quality cut for best flavor.
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup beef broth
  • 1 cup water
  • to taste Salt and pepper Use according to preference.
  • 6 to 8 hoagie rolls
  • Sliced cheese provolone cheese For topping.

Preparation

  • Place the beef chuck roast in the slow cooker and season with salt, pepper, thyme, and rosemary.
  • Add the sliced onion and minced garlic on top of the beef.
  • Pour the beef broth and water over the ingredients in the slow cooker.
  • Cover and cook on low for 8-10 hours or high for 4-6 hours.

Serving

  • Once cooked, shred the beef using two forks.
  • Serve the shredded beef on hoagie rolls, topped with provolone cheese.
  • Strain the cooking liquid and serve it as an au jus for dipping.

Notes

For extra flavor, marinate the beef in the spices overnight before cooking. You can add Worcestershire sauce to the broth for added depth. If you like a little spice, consider adding pepperoncini or banana peppers to the slow cooker. For a crunchy roll, toast the hoagie rolls in the oven for a few minutes before serving.
