  • 1 cup shredded cheddar cheese Stirred in before serving
  • 1 cup heavy cream Added for creaminess

Vegetables

  • 4 medium potatoes, diced Base of the soup
  • 1 cup carrots, chopped Can substitute with other vegetables
  • 1 cup celery, chopped
  • 1 large onion, chopped

Liquid and Seasoning

  • 4 cups beef broth For a richer base

Instructions
 

Preparation

  • In a skillet, brown the ground beef; drain any excess fat.
  • In a Crockpot, combine the browned beef, diced potatoes, chopped carrots, celery, onion, and beef broth.

Cooking

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • About 30 minutes before serving, stir in the shredded cheddar cheese and heavy cream.
  • Season with salt and pepper to taste and stir well.
  • Serve warm.
