Ingredients
  

Main Ingredients

  • 2 pounds boneless skinless chicken thighs Can be substituted with chicken breasts for a leaner option.
  • Kosher salt To taste.
  • 1/3 cup bourbon, whiskey, apple juice, or chicken broth Substitutions can be made as preferred.
  • 3/4 cup brown sugar
  • 3/4 cup soy sauce
  • 2 cloves garlic (minced)
  • 2 tablespoons cornstarch For thickening the sauce.
  • 3 tablespoons cold water To mix with cornstarch.

Instructions
 

Preparation

  • Season the chicken thighs with Kosher salt and pepper on both sides and place them in the bottom of the crockpot.
  • In a medium bowl, add bourbon, brown sugar, soy sauce, and minced garlic. Stir well to combine.
  • Pour the sauce mixture over the chicken in the crockpot.

Cooking

  • Cover with the lid and cook on low for 4 hours or high for 3 hours.
  • In a small bowl, whisk together cornstarch and cold water until combined.
  • Whisk the cornstarch slurry into the sauce 30 minutes before the chicken is done cooking.
  • Serve the chicken over rice, garnishing with green onions if desired.

Notes

For added flavor, consider marinating the chicken overnight in the sauce components. This dish can also be served over noodles or with a side of steamed vegetables. To keep it spicy, add red pepper flakes.
