  • 4 pieces carrots, chopped
  • 4 pieces potatoes, chopped
  • 1 piece onion, sliced Adds sweetness
  • 4 cups beef broth Cooking liquid

Seasonings

  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for gravy) For thickening the gravy

Preparation

  • Season the beef chuck roast generously with salt and pepper.
  • Sear the roast in a hot skillet, if desired, for added flavor.
  • Place the roast in the Crock Pot.
  • Chop the carrots and potatoes into even-sized pieces.
  • Slice the onion and distribute vegetables evenly around the roast.
  • Pour in the beef broth and sprinkle with garlic powder and onion powder.

Cooking

  • Cover and cook on low for approximately 8 hours.
  • Check for tenderness; it should be easily shredded with a fork.

Gravy (optional)

  • Remove the roast and vegetables from the pot.
  • Mix cornstarch with cold water and add to the remaining liquid in the Crock Pot.
  • Heat the mixture on the stovetop until thickened for gravy.

Notes

Serve the roast sliced with vegetables and drizzle with gravy. Optional: add fresh parsley for garnish. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to three months.
