  • 3 to 4 pounds beef chuck roast A good quality cut of meat.
  • 4 pieces carrots, peeled and cut into chunks
  • 4 pieces potatoes, peeled and cut into chunks
  • 1 piece onion, quartered
  • 2 cups beef broth Using beef broth instead of water enhances flavor.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire sauce Adds extra depth of flavor.
  • 2 tablespoons cornstarch (optional, for gravy) Mix with water to thicken gravy.

Preparation

  • Place the beef chuck roast in the slow cooker.
  • Add the carrots, potatoes, onion, and minced garlic around the roast.
  • Pour the beef broth over the entire mixture and sprinkle with salt and pepper to taste.
  • Add Worcestershire sauce for depth of flavor.
  • Cover the slow cooker and cook on low for 8 hours or on high for 4 hours.

Gravy Preparation

  • Once cooking is done, remove the meat and vegetables from the slow cooker.
  • Mix the cornstarch with a small amount of cold water and stir into the remaining liquid until it begins to thicken.

Serving

  • Serve the pot roast with the rich gravy drizzled over it.
  • Pair with crusty bread or a light salad.

Notes

Searing the beef before slow cooking can enhance flavor. Feel free to use other root vegetables or herbs for additional flavors.
