Ingredients
  

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 lb smoked sausage, sliced
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Green onions for garnish

Instructions
 

Preparation

  • In a large Crock Pot, combine the chicken, sausage, bell pepper, onion, celery, and garlic.
  • Add in the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, salt, and pepper.
  • Stir to combine all the ingredients well.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the rice is cooked and the chicken is tender.

Serving

  • Before serving, fluff the rice and garnish with green onions.

Notes

To enhance flavor, brown the chicken and sausage before adding to the Crock Pot. This dish can be customizable according to spice preference. Leftovers can be stored in an airtight container for up to four days in the refrigerator or frozen for later use.
