Ingredients
  

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup rice (white or brown)
  • 1 cup chicken broth
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup shredded cheese (cheddar or your choice) Add during the last 15 minutes of cooking
  • 1 piece onion, chopped
  • Salt and pepper to taste
  • Optional: vegetables (peas, carrots, etc.) Add when mixing the rice and broth

Instructions
 

Preparation

  • Place the chicken breasts in the bottom of the Crock Pot.
  • In a bowl, mix together the rice, chicken broth, cream of chicken soup, chopped onion, and any optional vegetables.
  • Pour the mixture over the chicken in the Crock Pot.
  • Season with salt and pepper.

Cooking

  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
  • In the last 15 minutes of cooking, add the shredded cheese on top and allow it to melt.

Serving

  • Serve warm, spooning the chicken and creamy rice into bowls.

Notes

For added richness, consider browning the chicken breasts before placing them in the Crock Pot. You can also experiment with different cheeses or add garlic and spices for extra flavor.
