  • 1 lb beef (thinly sliced)
  • 1 cup bell peppers (sliced) Use fresh for best flavor
  • 1 cup onions (sliced)
  • 1 cup mushrooms (sliced)
  • 1 package (9 oz) cheese tortellini Can use frozen tortellini
  • 1 cup cream cheese
  • 1 cup beef broth Ensure gluten-free if necessary
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a slow cooker, combine the sliced beef, bell peppers, onions, and mushrooms.
  • Add the beef broth, garlic powder, Italian seasoning, salt, and pepper.
  • Place the cream cheese on top of the mixture.
  • Cover and cook on low for 6-8 hours or until the beef is tender.
  • About 15 minutes before serving, add the cheese tortellini and stir.
  • Cook until the tortellini is tender. Serve warm.

Notes

Use fresh vegetables for the best flavor and texture. For a spicier dish, add red pepper flakes or hot sauce. Stir in extra cheese before serving for more creaminess. Leftovers can be stored in the fridge for up to 3 days or frozen.
