Ingredients
  

For the rice

  • 2 cups short-grain sushi rice Rinsed thoroughly
  • 2 cups water
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • to taste none Salt

For frying

  • as needed none Vegetable oil For frying

Toppings of choice

  • to taste none Avocado Sliced
  • to taste none Raw fish
  • to taste none Spicy mayo

Instructions
 

Preparation

  • Rinse the short-grain sushi rice under cold water until the water runs clear.
  • In a pot, combine the rice and water, bring to a boil, then reduce heat to low and cover. Cook for about 18-20 minutes until rice is tender.
  • Once cooked, fluff the rice and mix in soy sauce, sesame oil, and salt to taste.
  • Allow the rice to cool completely.
  • Once cooled, shape the rice into small, flat cakes.

Cooking

  • Heat vegetable oil in a frying pan over medium heat.
  • Fry the rice cakes for about 3-4 minutes on each side until golden brown and crispy.
  • Remove from heat and drain on paper towels.
  • Top with your favorite sushi toppings and serve.

Notes

Store in an airtight container at room temperature for up to two days, but best enjoyed fresh to maintain crunch.
