  • 1 pound small Yukon Gold potatoes, unpeeled and scrubbed
  • garlic olive oil, for brushing
  • to taste N/A Kosher salt
  • 2 tablespoons grated Parmesan cheese
  • 3 scallions, sliced

Preparation

  • Preheat the oven to 400°F and line a baking sheet with aluminum foil.
  • Using a sharp knife, carefully make several thin cuts across each potato, being careful not to slice all the way through.
  • Place the potatoes on the prepared baking sheet, brush generously with garlic olive oil, and sprinkle with kosher salt.

Baking

  • Bake for about 30 minutes, or until the potatoes are tender.
  • Remove from the oven and sprinkle evenly with Parmesan cheese.
  • Return to the oven and bake for an additional 5–10 minutes, until the cheese is melted and lightly golden.
  • Let cool for about 10 minutes, then top with sliced scallions and serve.

Notes

Place a wooden spoon on each side of the potato while cutting to avoid slicing through. Slice the potatoes evenly for consistent cooking. Add extra toppings like sour cream or bacon if desired.
