Ingredients
  

For the Beef Filling

  • 1 pound 90/10 ground beef
  • 1/2 medium onion, finely chopped
  • 2 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • 1/4 cup water or beef broth (as needed)

For the Tacos

  • 8 (6 inch) taco size flour tortillas
  • 2 to 3 cups mozzarella cheese, shredded
  • Avocado or vegetable oil for frying
  • Fresh cilantro, finely chopped for garnish

Instructions
 

Preparation

  • Heat about 1 tablespoon of oil in a large skillet over medium heat.
  • Add the chopped onions and cook until softened, about 2-3 minutes.
  • Add the ground beef, breaking it apart as it cooks. Brown the beef, about 4-5 minutes.
  • Mix in the tomato paste and taco seasoning. Add water or beef broth if the mixture is dry. Cook until everything is fully cooked and the liquid evaporates, about 3-4 minutes. Add salt to taste and set aside.
  • On each tortilla, place 1.5 to 2 tablespoons of shredded mozzarella cheese, some beef mixture, and an additional layer of cheese. Fold the tortilla in half and gently press to seal.

Cooking

  • Heat 3-4 tablespoons of oil in another skillet over medium heat. Fry the tacos in batches for about 1 minute on each side until golden brown.
  • Place cooked tacos on a wire rack over a baking sheet and garnish with fresh cilantro before serving hot.

Notes

Consider serving a taco bar with toppings like salsa, guacamole, sour cream, lettuce, tomatoes, and jalapeños. Serve with lime wedges for extra flavor.
