Ingredients
  

For the Dough

  • 3.5 cups 3 ½ cups all-purpose flour, preferably unbleached
  • 1.5 cups 1 ½ cups warm water (around 100°F / 38°C)
  • 2.25 teaspoons 2 ¼ teaspoons active dry yeast One packet
  • 1 tablespoon 1 tablespoon granulated sugar
  • 2 teaspoons 2 teaspoons salt
  • 3 tablespoons 3 tablespoons olive oil (plus extra for the pan)

For the Toppings

  • 3 cups 3 cups shredded brick cheese or whole milk mozzarella
  • 1.5 cups 1 ½ cups canned crushed tomatoes
  • 0.5 teaspoon ½ teaspoon garlic powder
  • 1 teaspoon 1 teaspoon dried oregano
  • 1 pinch Red pepper flakes Optional
  • 1 handful A handful fresh basil, roughly chopped Optional
  • 2 tablespoons 2 tablespoons grated Parmesan cheese

Preparation

  • Activate the yeast: In a small bowl, combine warm water (100°F/38°C), sugar, and yeast. Stir gently and let it sit for 5-10 minutes until foamy.
  • Make the dough: In a large bowl or stand mixer, combine the flour and salt. Slowly add the yeast mixture and olive oil. Mix until the dough begins to come together, about 3-4 minutes by mixer or 5-7 minutes by hand.
  • First rise: Lightly oil a clean bowl, place the dough inside, and cover with a damp towel or plastic wrap. Let it rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  • Prepare the pan: Generously oil your Detroit style pizza pan or cast iron skillet with olive oil, making sure to coat the edges well.
  • Shape the dough: Transfer the risen dough to the oiled pan. Press it gently to fill corners and edges. Let rest 5 minutes if it springs back.
  • Add cheese: Evenly distribute the shredded brick cheese or mozzarella all the way to the edges.
  • Top with sauce: Spoon dollops of crushed tomato sauce over the cheese in three thick stripes. Sprinkle garlic powder, oregano, and red pepper flakes if using.
  • Second rise (optional): Let the pizza rest for another 15-20 minutes for a lighter crust.
  • Bake: Preheat oven to 500°F (260°C). Place pizza on middle rack and bake for 15-20 minutes until crust is golden and crispy and cheese is bubbly with browned edges.
  • Finish: Remove from oven, sprinkle with grated Parmesan and fresh basil if desired. Let sit for 5 minutes before slicing.

Notes

Consider using a high-fat content cheese for better melting properties. Allowing dough to rise two times can lead to a lighter crust.
