For the Taquitos

  • 8 pieces Corn tortillas Use fresh tortillas for better texture
  • 1 lb Ground beef Browned and seasoned with taco seasoning
  • 1 cup Cheese (e.g., cheddar or Monterey Jack) Shredded
  • 1 packet Taco seasoning Add according to package instructions
  • Oil as needed Oil (for frying or baking) Ensure the oil is hot for frying

For Serving

  • 1 cup Sour cream For serving
  • 1 cup Salsa For serving

Preparation

  • Preheat the oven to 400°F (if baking).
  • In a skillet, brown the ground beef over medium heat, adding taco seasoning according to package instructions.
  • Warm the corn tortillas to make them pliable.

Assembly and Cooking

  • Place a spoonful of the beef mixture and a sprinkle of cheese on each tortilla. Roll them tightly and secure with a toothpick if necessary.
  • If frying, heat oil in a pan and fry each taquito until golden brown and crispy, about 2-3 minutes per side.
  • If baking, place taquitos seam side down on a baking sheet, brush with oil, and bake for 15-20 minutes until crispy.

Notes

Store leftover taquitos in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F for about 10 minutes. You can change the filling by using shredded chicken, pork, or black beans for a vegetarian option.
