Pasta and Sauce Ingredients

  • 8 oz pasta (fettuccine or linguine)
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • to taste salt and pepper
  • Parmesan cheese for serving

Salmon Ingredients

  • 2 fillets salmon Ensure to use fresh, sustainably sourced salmon for best flavor.

Instructions
 

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Season the salmon fillets with salt and pepper.

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add the salmon to the skillet and cook for about 4-5 minutes on each side until cooked through and flakes easily. Remove from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  • Add the heavy cream and bring to a simmer. Stir in fresh spinach and cook until wilted.
  • Flake the cooked salmon into bite-sized pieces and add it back to the skillet.
  • Toss the cooked pasta into the cream and spinach mixture until well combined.

Serving

  • Serve warm, topped with grated Parmesan cheese.

Notes

Consider adding lemon zest or a squeeze of lemon juice to brighten the dish before serving. You can also try different types of cheese like pecorino or feta for an intriguing twist.
