Pasta and Sauce

  • 8 oz pasta (fusilli or penne) Cook until al dente.
  • 1 cup fresh basil leaves Use fresh for best flavor.
  • 1/2 cup heavy cream Adds richness to the sauce.
  • 1/2 cup grated parmesan cheese For depth of flavor.
  • 1/4 cup pine nuts Toasted for enhanced flavor.
  • 2 cloves garlic Freshly chopped for the pesto.
  • Salt and pepper to taste To enhance flavors.
  • Olive oil Used in making pesto.

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a food processor, combine basil leaves, garlic, pine nuts, and a pinch of salt. Pulse until finely chopped.
  • With the processor running, slowly add olive oil until the mixture becomes a smooth paste.

Cooking

  • In a large skillet, combine the heavy cream and pesto mixture over medium heat. Stir in the parmesan cheese until fully melted and creamy.
  • Add the cooked pasta and toss until well coated with the sauce. Season with salt and pepper to taste.
  • Serve immediately.

Notes

For an inviting presentation, plate the pasta in large, shallow bowls and garnish with additional parmesan and a sprig of basil. Pair with a light salad and a glass of white wine.
