Preparation

  • Cook the gnocchi according to package instructions, then drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
  • Add the spinach and sauté until wilted.
  • Pour in the heavy cream and bring to a simmer.
  • Stir in the cooked gnocchi and crumbled feta.
  • Season with salt and pepper to taste.
  • Cook for an additional 2-3 minutes until heated through.

Serving

  • Serve this creamy dish warm right from the skillet. It’s perfect on its own or as a side with grilled chicken or fish.
  • You can add extra crumbles of feta on top for an added burst of flavor.

Notes

Make sure not to overcook the gnocchi; they should be soft but not mushy. For a touch of freshness, add a squeeze of lemon juice before serving. You can use frozen spinach if fresh is not available; just make sure to thaw and drain any excess water. To store leftovers, place the cooled dish in an airtight container and it can be kept in the refrigerator for up to 3 days. Reheat gently before serving.
