  • 1 cup Arborio Rice Rinse before cooking to prevent clumping.
  • 4 cups Low-Sodium Chicken Broth Adds depth of flavor.
  • 2 large Yellow Onions Slice thinly for even cooking.
  • 3 cloves Garlic Minced.
  • 2 teaspoons Fresh Thyme Finely chopped.
  • 2 tablespoons Unsalted Butter Adds richness.
  • ½ cup Parmesan Cheese Grated.

Preparation

  • Begin by heating a large pot over medium heat and melting the unsalted butter.
  • Add the thinly sliced onions and cook them slowly, stirring occasionally, until they caramelize and turn golden brown (about 20-25 minutes).
  • Stir in the minced garlic and fresh thyme, cooking for another minute until fragrant.
  • Add the Arborio rice to the pot, stirring frequently for about 2-3 minutes to toast the rice.
  • Gradually pour in the low-sodium chicken broth, one cup at a time, stirring frequently and allowing the rice to absorb the liquid before adding more.
  • Continue this process until the rice is cooked al dente and has a creamy consistency, approximately 18-20 minutes.
  • Remove from heat and stir in the grated Parmesan cheese until thoroughly combined and creamy.
  • Season with salt and pepper to taste, and serve immediately while hot.

Notes

To store leftovers, allow the rice to cool completely before placing in an airtight container for up to three days. Reheat with a splash of chicken broth or water.
