  • 2 cups Fresh shiitake mushrooms Diced
  • 2 cups Fresh crimini mushrooms Diced
  • 1 cup Cream Heavy cream for richness
  • 1 cup Chicken or vegetable broth For the soup base
  • 1 medium Onion Finely diced
  • 2 cloves Garlic Minced
  • 2 tablespoons Butter For sautéing
  • 1/2 cup Sherry For deglazing
  • to taste Salt For seasoning
  • to taste Pepper Freshly cracked, for seasoning
  • 1 tablespoon Fresh thyme For flavor

Preparation

  • Heat butter in a pot over medium heat.
  • Add diced onions and minced garlic, cooking until softened.
  • Add chopped shiitake and crimini mushrooms, cooking until they release their moisture and begin to brown.

Cooking

  • Pour in the sherry and let it simmer for a few minutes.
  • Add the broth and bring to a boil, then reduce heat and simmer for 15-20 minutes.
  • Stir in cream and fresh thyme.
  • Season with salt and pepper to taste.
  • Use an immersion blender to puree the soup to your desired consistency.
  • Serve hot and enjoy!

Notes

For serving, garnish with fresh thyme or drizzle of truffle oil. Pairs well with crusty bread, green salad, or grilled cheese. Allows for variation with herbs and spices.
