Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 4 oz cream cheese (softened)
  • 1/4 cup granulated sugar
  • 2 tablespoons butter (melted)
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 cup milk

Preparation

  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate large bowl, whisk the cream cheese and sugar until smooth.
  • Whisk the melted butter, vanilla, and eggs into the cream cheese mixture until there are no lumps.
  • Gently fold the wet ingredients into the flour mixture.

Cooking

  • Heat a large frying pan or electric griddle to low-medium heat and lightly grease with oil.
  • Pour 1/4 cup of batter per pancake onto the griddle and cook for 2-4 minutes until air bubbles form.
  • Flip the pancake and continue cooking until golden brown.

Notes

Serve with maple syrup, fresh fruit, or whipped cream. Store cooked pancakes in an airtight container for up to 3 days, or freeze for longer storage.
