  • 10 tbsp melted unsalted butter
  • 1 cup packed light brown sugar
  • 1 large egg (kept cold)
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • ¾ tsp fine sea salt

Dry Ingredients

  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 cup all-purpose flour
  • ½ cup almond flour

Mix-Ins

  • ¾ cup dried sweetened cranberries
  • ½ cup white chocolate chips
  • ½ cup sliced almonds

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare an 8x8-inch pan by greasing it and lining it with parchment paper, leaving an overhang.
  • In a mixing bowl, combine melted butter with packed light brown sugar and whisk until smooth.
  • Incorporate cold egg, almond extract, vanilla extract, and fine sea salt, whisking until creamy and glossy.
  • Stir in baking powder and baking soda, then gently fold in both all-purpose and almond flour until almost combined.
  • Add cranberries and most of the white chocolate chips, then fully combine the mixture.

Baking

  • Spread the batter evenly into the prepared pan and sprinkle with sliced almonds and remaining white chocolate chips.
  • Bake for 27-32 minutes until the top is golden and the center is slightly soft.
  • Allow to cool fully in the pan, then lift out using the parchment paper and cut into bars.

Notes

Store in an airtight container for up to 4 days at room temperature, or refrigerate for longer shelf life. Freeze bars for extended freshness.
