Ingredients

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika (choose smoked or sweet)

Sauce Ingredients

  • 1 tbsp olive oil (for searing)
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp red pepper flakes adjust according to your taste
  • 1 tbsp fresh parsley, chopped extra for garnish
  • 1 tsp fresh dill, chopped optional but suggested
  • 1 tbsp fresh lemon juice approximately from 1 lemon
  • 1/2 cup chicken broth or substitute with water for a lighter version
  • 1/2 cup heavy cream

Preparation

  • Season the chicken breasts with salt, black pepper, and paprika.

Searing Chicken

  • Heat olive oil in a large skillet over medium-high heat and sear the chicken for 5-7 minutes per side until golden brown; set aside.

Making the Sauce

  • In the same skillet, melt unsalted butter and sauté minced garlic until fragrant.
  • Stir in Dijon mustard and red pepper flakes, cooking briefly until fragrant.
  • Add fresh parsley and dill, letting the herbs release their aroma.
  • Pour in chicken broth and lemon juice; simmer gently while stirring occasionally.
  • Incorporate the heavy cream and allow to thicken slightly.

Finishing Touch

  • Reintroduce the chicken, letting it soak in the sauce for a few minutes.
  • Garnish with extra parsley before serving.

Notes

Serve Cowboy Butter Chicken with fluffy rice, creamy mashed potatoes, or seasonal vegetables. Garnish with lemon wedges for added flavor.
